What is Trehalose ?

 

Trehalose is a non-reducing disaccharide composed of two glucose molecules. The molecular formula is C12H22O11. Trehalose is a sugar widely found in nature and can be found in mushrooms, yeast and other common foods. Many experiments have proved that trehalose can effectively protect cells and proteins from damage caused by freezing or drying.
